Wood chips

When it comes to grill smoke and wood chips, the best bet is to go with food grade pellets. These can be found in 10- to 40-pound bags. They produce more smoke in a short burst than wood chips, which is ideal for quick cooks.

If you're looking for a more traditional approach, consider a foil pouch. This is a container that can be placed on top of the grates of a gas or electric smoker. The pouch allows you to smoke meat at 225 degF.

A wood smoke box is another way to add smoke to your meat. A box can be purchased, or a simple aluminum pan with holes can be used as a container. Using a box will help distribute the smoke throughout the meat, and improve the burn.

Another option is to use sawdust in place of wood chips. Sawdust is also a good choice for thin foods like vegetables and seafood. It can be used on its own or combined with chips for a smoked flavor.

Propane or gas
